Our love for beets began with our quest to detox in the new year and we shuffled our usual green juices with a beet red -- quite literally -- juice. A break from the greens meant a slight sweet beet and it has us wondering, what else could we do with beets? Spiralize them, of course!

A favorite kitchen gadget of ours, the spiralizer transformed our beets into noodles that taste even better cold then warm. That time we tried to warm up our beet noodles did not go as planned. We do not advise to try this technique.

Beets have been found to have a wealth of benefits from improving stamina to lowering blood pressure. They are rich in vitamin B folate, vitamin c and fiber which also makes this veggie a great anti-inflammatory.

As summer approaches, indulge in some healthy beet noodles with a dressing that almost tastes too delicious to be nutritious.

Ingredients for Noodles
3 med sized beets, spiralized1/4 avocado, sliced, as garnish
1 tsp sesame seeds

Ingredients for Dressing
2 cups fresh squeezed lemon juice
3 whole cloves garlic
3 Tbs fresh minced ginger
3 Tbs Tamari
2 tsp honey, agave or liquid stevia
1.5 cups olive oil
8-10 pine or brazil nuts

Method
1. Blend all dressing ingredients in a high speed blender or Vitamix until smooth.
2. Pour over your spiralized beets, stirring to coat the "noodles"
3. Garnish with avocado slices, sprinkle the sesame seeds and enjoy!
