We're in the thick of watermelon season right now, so hit up your local farmer's market and snatch a few juicy watermelons before summer's over to make this incredibly refreshing and healthy sweet treat.

1 large watermelon slice cut from the center of the melon
1/2 cup Greek yogurt
3 tablespoons honey
1 tsp vanilla extract
2/3 cup strawberries, sliced
1/2 cup blackberries, halved
1/3 cup blueberries
2 small apricots, sliced
Fresh mint leaves for garnish
A sprinkle of sea salt
1. Combine yogurt, honey and vanilla in a small bowl and mix thoroughly.
2. Spread the yogurt mixture over the slice of watermelon; top with a variety of the prepared fruit.
3. Cut each slice into 8 wedges. Finish by adding a sprinkle of sea salt, a drizzle of extra honey and topping with mint sprigs.
