3¼ cup gluten free, low sodium chicken broth, divided
7.2 oz box Van’s™ Gluten-Free Creamy Herb & Garlic Pasta
4.5 oz pkg baby kale leaves
12 oz gluten-free chicken and apple smoked sausage, sliced
½ tsp minced garlic
2 Tbsp unsalted butter
½ cup skim milk
2 Tbsp reduced-fat Parmesan cheese, divided
½ tsp black pepper
In a large stockpot bring 3 cups chicken broth and 3 cups water to a boil. Remove garlic and herb packet from pasta box. Add pasta to water and reduce heat to medium. Cook for 8-9 minutes or until al dente, stir occasionally. Make sure not overcook pasta. Drain pasta and set aside.
Meanwhile, in a medium size stockpot, bring 3 cups of water to a boil. Add kale leaves, turn heat To low and let simmer for 10-15 minutes, stir occasionally. Drain and set aside kale.
Lightly spray the pot your pasta was in with nonstick cooking spray. Sauté sausage and garlic over medium-low heat for 5 minutes.
Next, add butter. Once melted, pour in remaining ¼ cup of chicken broth, milk, 1 Tbsp Parmesan, pepper and the contents of the herb packet the pasta came with. Mix well and cook for an additional 3 minutes.
Stir in pasta and kale and cook for one more minute until everything is warmed through.
Sprinkle with remaining 1 Tbsp of Parmesan and serve hot!
