Proving that age is just a number, Christie Brinkley looks absolutely radiant in the new issue of Social Life Magazine. The 63-year-old's spread included a few playful and skin-baring swimwear photos; she even went completely nude in one, save for a single (albeit giant) palm frond.

The new photo shoot comes a few months after she graced the cover of the Sports Illustrated Swimsuit Edition with her two daughters after over 10 years away.

In the interview, Brinkley opens up about her love for animals and the planet, as well as her future aspirations.

"I want to drive across America and sail around Greece and Sicily," she says. "I want to see the Aurora Borealis and the icebergs before they disappear. I want to speak fluent Italian and learn to dance hip hop."

Brinkley, a vegetarian since her teenage years, talked about the time during a Sports Illustrated shoot when she found herself face-to-face with an elephant.

"We were looking for elephants to be in the background of our Sports Illustrated Swimsuit pictures, when we suddenly broke through some bushes and I found myself eye to eye with a surprised and angry mother protecting her baby," she told Social Life Magazine. "She raised her trunk and trumpeted a warning! If I had large ears, I would have flapped them back at her [but] we clapped our car doors to show that we meant business too!"

After her close encounter with the wild creatures, Brinkley has worked with the organization Hands Off Our Elephants.

"We were two moms willing to die to protect our babies," she told the magazine. "I knew from that day forward I would always love and try to do my part to protect this matriarchal society of loving, intelligent, majestic animals."

Brinkley's not just passionate about protecting wildlife; she has also been a supporter of healthy living throughout her entire life — and the results prove it!

She has always stuck to a routine of healthy eating and robust fitness, telling Shape that she loves Total Gym, SoulCycle, yoga, bicycling, paddle boarding, surfing, skiing and swimming.

"The only constant that I have in my life is that I start whatever I do with my Total Gym because I believe it helps keep me from getting injured," she said.

When it comes to her vegetarian diet, the mom of three does have one quirk that sets her apart from other healthy eaters: She likes to eat dinner leftovers for breakfast.

Brinkley told Doctor Oz that her breakfast usually contains a grain (like quinoa), lentils, vegetables and a bit of oil and vinegar. Add a glass of warm water with lemon and you've got Brinkley's daily breakfast!

While it's apparent that her years of healthy eating and exercise can take at least some of the credit for her incredible figure, Brinkley also says that her positive attitude has a lot to do with it.

"Ultimately, your age is determined by your attitude," she told Doctor Oz. "I'm much more concerned with how I feel. When you feel great and you feel energetic, that also makes you look better, but the number one thing I'm concerned about is feeling good."
